Crown Roast of Lamb
This is a roast that is formed from the lamb loin, or rack of lamb, by tying it into a circle with the ribs up. After it is cooked, the tips of the bones are often decorated with paper frills. The roast's hollow centre section is usually filled with mixed vegetables or other stuffing.

Haggis is a dish containing lamb 'pluck' (heart, liver and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock. The haggis is prepared in a beef casing, and presented partially cooked.

Lamb - Whole
If you require a whole lamb, for a roast or a spit, we can supply. Alternatively, we can cut the lamb into portions for you to store more easily.
Shank or shin is tough and lean, and benefits from long, slow moist cooking, which makes it succulent and gelatinous.
